They’d create an easy to hide tube using scraps of metal from the cooperage, solder a penny on one end and put a cork in the other and would use it to help themselves to a wee dram of the whisky. These Speyside rascals and characters are the inspiration for this unique blend of no fewer than eight single malt whiskies, slowly married together in old oak casks. It has a fairly thin body, and doesn’t really stand up to being a sipper that you can sit down and spend a lot of time with.

Every spicy note is partnered with something sweet and the balance of this dram is something you’ll remember. The name of both the whisky and the pub refer to a makeshift device once used by distillery workers to illicitly sample and carry whisky from maturing casks. Once blended, Copper Dog is bottled with a label featuring batch number details, the blender’s signature and a dog emblem designed by famed British illustrator Hugo Guinness.Simple enough to be approachable but complex enough to thrive with any mixer – and should always be amplified by a soundtrack of music and lively conversation. I’ve actually used this in several cocktails as a result, as well as in hot toddies and in my whisky sauce to accompany a haggis, neeps, and tatties Burns supper.
